Chia pudding with red berry coulis
Recipe from Emanuela Gornati
Preparation
- Pour all the ingredients in a pot and heat up.
- Stir and cook on low for 15-20 minutes until it becomes a uniform cream. It should not get too thick.
- Cool down.
- Pour all the ingredients in a bowl, stir and set aside.
- Leave for 10 minutes, stir again and mix well.
- Put it in the fridge and let it settle for at least a minimum of 2 hours, it’d be ideal to leave it all night.
- Split into 2 glasses placing 2 tablespoons at the bottom.
- Next, make another layer of chia seeds which, after having rested for a while, should have thickened. Stir well before using.
- Make a second layer with the red berry coulis.

Advice
"Use the topping of your choice to decorate. In this case, we’ve used coconut and fresh fruit."
