Depurative Paella with Quinua Real

  1. Wash the Quinua Real by placing in a bowl, immersing in water and agitating by hand, changing the water 3 times. Drain it, put in a cooking pot and toast for a minute, stirring well. Add the salt, bay leaf, tumeric and a glass and a half of water. Bring to a boil, reduce heat to a minimum and leave covered for 17 minutes.
  2. Meanwhile, sauté the leek for 5 minutes. Add the mushrooms, tomato and dried oregano and basil and sauté for 5 more minutes. Add the Quinua Real and sauté.
  3. Serve with fresh parsley and a few drops of lemon juice.


    (For 2 people)


  • 1 cup of Quinua Real grain
  • 1 bay leaf
  • A pinch of turmeric
  • 2 cups of sliced mushrooms
  • 1 leek cut into thin slices (including the green part)
  • 1 chopped tomato
  • Dried oregano and basil
  • 1 tablespoon of soy sauce
  • Half a lemon
  • Fresh chopped parsley
  • Cold-pressed extra virgen olive oil
  • Salt
