2 ripe bananas

250 ml quinoa rice drink

1 tsp vanilla extract

4 vegan cookies

2 tbsp chocolate chips

  1. Peel and slice bananas. Place in a single layer on a lined baking sheet. Place in the freezer for at least 5 hours or overnight.
  2. To make the ice cream, place the frozen banana and the vanilla extract with the quinoa rice drink in a food processor. Blend scraping down sides as needed, until the mixture reaches a smooth consistency.
  3.  Add the crumbled cookies and the chocolate chips. Scoop into 1 or 2 small serving bowls.
