Crepes with organic cocoa ice cream

20 min Easy 6 crepes

180 g organic quinoa real flour

500 ml Organic quinoa real & rice drink

70 g applesauce

½ tsp vanilla extract

½ tsp ground cinnamon

2 tbsp rice syrup

To serve

Banana

Dark chocolate, melted

  1. In a blender add all the ingredients. Blend on high speed for 30 seconds. Scrap the side of the blender and blend again for 30 seconds. If you don't have a blender, feel free to combine all the ingredients into a mixing bowl using a whisk.
  2. Heat a lightly oiled crepe pan over medium heat. I recommend to use coconut oil and to rub the oil onto the pan using a piece of absorbent paper to avoid adding too much oil.
  3. Scoop the batter onto the pan, then tip and rotate the pan to spread batter as thinly as possible. Cook for 1 to 2 minutes until the batter gets darker. Then flip the crepe and cook for 1 minute more until brown the other side of the crepe. Repeat with the remaining batter.
  4. In the meantime, melt the dark chocolate in the microwave for about 1 minute using only 50% power.
  5. Serve the crepes folded into triangles. We like to add strawberries, banana, and then topped it with Organic cocoa i ice cream and melted chocolate. Enjoy!
