Prepare two separate bowls. In the first one, mix lemon juice and soymilk and let thicken for 10 minutes. In another bowl, mix together quinoa flakes, flour, garlic powder, nutritional yeast, pepper and salt.
Meanwhile, cut the seitan into finger shaped pieces.
Start by dipping each piece of seitan in the soymilk bowl. Then, transfer to the second bowl and coat in the quinoa flakes on both sides. Press each side firmly down in the flakes mixture. 4. Repeat the process if you want thicker breading, highly recommended.
Fry the seitan fingers in oil on medium high heat on both sides, until golden and crispy.
Drain on paper towel. Serve them with your favorite dipping sauce and enjoy!
