Frozen yogurt bark with granola & berries

3 cups vegan yogurt (your favorite)

4 tbsp cocoa & coconut granola

½ cup berries (blueberries and raspberries)

Berry compote

1 cup berries (strawberries and raspberries)

1 tbsp lemon juice

1 tbsp water

1 tsp chia seeds

  1. 1. To make berry compote. Place blueberries, raspberries, lemon juice and water in a small saucepan. Bring the mixture to a boil over medium-high heat, stirring occasionally. This will take about 5 minutes for fresh berries or 10 minutes for frozen berries.
  2. Remove the compote from the heat and blend it until smooth. Add chia seeds and let the compote cool completely in the fridge.
  3. To assemble yogurt bark. Line a baking sheet with wax paper. Spread yogurt mixture evenly, about 5 mm thick, onto the prepared baking sheet.
  4. Pour berry compote in straight lines then swirl in with a toothpick or knife.
  5. Scatter the raspberries and blueberries on top. Sprinkle with cocoa & coconut granola.
  6. Place in the freezer for about 3 hours or until the yogurt is firm. Cut or break into 6-9 pieces and serve.
