Granola berry parfait

1 cup berries (blueberries and raspberries)

1 tbsp lemon juice

2 tbsp water

1 ½ cups yogurt (your favorite)

1 cup cocoa & coconut quinoa granola

Fresh mint

1 cup berries (blueberries and raspberries)

1. Place blueberries, raspberries, lemon juice and water in a small saucepan. Bring the mixture to a boil over medium-high heat, stirring occasionally. This will take about 5 minutes for fresh berries or 10 minutes for frozen berries.

2. Remove the compote from the heat. If you’d like it to be more smooth, mash it with a potato masher or a fork. Let the compote cool completely.

3. Then, assemble the parfaits. Add 3-4 tablespoons of yogurt into each glass followed by 2 tablespoons of berry compote and then add a layer of cocoa & coconut quinoa granola.

 4. Repeat the layers and top each parfait with a sprig of fresh mint.
