Green quinoa salad

Green quinoa salad

170 g organic quinoa real

500 ml water

3 large handfuls of green leaves

½ red onion, finely chopped

2 carrots, peeled and finely chopped

1 apple, finely chopped

1 handful chopped walnuts



1/2 ripe avocado

2 tbsps fresh coriander, chopped

6 tbsp water

2 tbsp lime juice

2 tbsp olive oil

Sea salt and black pepper to taste

  1. First, rinse the quinoa thoroughly under cool water. Drain well. Heat 1 tbsp of olive oil in a small saucepan over medium-high heat and add the drained quinoa and cook, stirring constantly, to let the water evaporate and toast the quinoa, about 2 minutes.
  2. Add water and bring it to a boil. Lower the heat and cook, covered, for 15 minutes. Remove the pot from heat and let stand for 5 more minutes, covered. Then fluff the quinoa gently with a fork and set aside.
  3. To make the dressing add all of the ingredients to a blender and mix until creamy.
  4. Quinoa salad. In a large bowl, combine the quinoa, chopped veggies and dressing. Toss well to combine and serve.
