Lemon curd granola jars

Easy 4 jars

2 cups apple & cinnamon quinoa granola

1 ½ cups yogurt (your favorite)

Lemon curd

3 tbsp lemon juice

3 tbsp rice syrup

8 tbsp coconut milk

2 tbsp cornstarch

¼ tsp turmeric powder (optional)

1. Place lemon juice, rice syrup, coconut milk, cornstarch and turmeric in a small saucepan. Bring the mixture to a boil over medium heat, whisking frequently until the mixture thickens. It will take 5-8 minutes

 2. Pour into a glass jar and allow to cool completely. Once cool, store in the fridge.

 3. Then, assemble the jars. Add 2-3 tablespoons of apple & cinnamon quinoa granola into each jar. Then add a layer of your favourite yogurt followed by 2 tablespoons of lemon curd.
