Sweet potato quinoa burgers

Sweet potato quinoa burgers

80 g organic tri-color quinoa real

250 ml water

1 sweet potato (400 g)

1 tbsp quinua flour

½ tsp smoked paprika

¼ chili powder

½ tsp salt

¼ tsp black pepper


Yogurt Sauce

6 tbsp vegan yogurt

1 tbsp lemon juice

½ tsp dried dill

Sea salt and black pepper to taste


Pickled Onions

½ red onion, thinly sliced

100 ml boiling water

100 ml apple cider vinegar

1/2 tsp salt

To cook quinua

1. First, rinse the quinoa thoroughly under cool water. Drain well. Heat 1 tbsp of olive oil in a small saucepan over medium-high heat and add the drained quinoa and cook, stirring constantly, to let the water evaporate and toast the quinoa, about 2 minutes.

2Add water and bring it to a boil. Lower the heat and cook, covered, for 15 minutes. Remove the pot from heat and let stand for 5 more minutes, covered. Then fluff the quinoa gently with a fork and set aside.

 3. To roast sweet potato. Preheat the oven to 200°C. Cut the sweet potato in half lengthways. Arrange on a baking tray and roast in the oven for 30 minutes, or until soft.

4. Set the sweet potato aside to cool for a few minutes and then remove the skin

5. Yogurt Sauce. Mix all the ingredients in a bowl and adjust seasoning to taste.

6. Pickled Onions. Place all the ingredientes in jar. Let the pickled onions cool to room temperatura. Cover and refrigerate, they keep well for 2 to 3 weeks.

7. Burger Patties. Add sweet potato to a large bowl and mash with a fork. Then add the quinoa, quinoa flour and spices. Mix well, taste and adjust seasonings as needed. The mixture should be easy to shape and mold.

8. Divide into 4-5 balls, flatten into patties and place them in a plate. You can also wrap and freeze them for another day.

9. Heat 1 tablespoon of olive oil in a non-stick pan over medium heat. When the pan is hot, fry the burgers for 4 minutes on each side, or until golden.

10. Serve the burgers with green leaves, cucumber and avocado slices. Top the burgers with yogurt sauce and pickled onions. Enjoy!
