Vegan chocolate bites with quinoa real

Vegan chocolate bites with quinoa real

20 min Easy 20-25 balls

150 g organic cocoa & coconut granola

3 tbsp unsweetened cocoa poder

30 g walnuts

140 g pitted dates roughly chopped

3 tbsp melted coconut oil

1 pinch of salt

Up to 3 tbsp warm water, as needed

50 g dark chocolate

  1. First, place granola, cocoa poder and walnuts into a food processor and process on high until you’ve created a fine meal.
  2. Add the rest of the ingredients to the food processor and process on high. Pour 1 tbsp of water at a time up to 3 tbsp, or until it becomes a sticky solid dough.
  3. Refrigerate the mixture until firm enough to roll into balls, about 30 minutes.
  4. Next, scoop a heaping tablespoon of dough into your hands and roll into a ball and place on a baking sheet. Repeat until dough is gone.
  5. Melt the dark chocolate in the microwave for about one minute using only 50% power.
  6. Drizzle chocolate over the top of the balls using a teaspoon.
  7. Place baking sheet in the freezer for 10-15 minutes and then transfer balls to a freezer safe bag ora n airtight container.

 

*These chocolate bites can be kept refrigerated for up to 2 weeks. They also freeze well for up to 3 months. Thaw overnight in the fridge before eating.
