1. Preheat oven to 180°C.
2.Mash together the banana, melted coconut oil and peanut butter with a fork in a medium-sized bowl.
3. Add the the rest of the ingredients and combine very well with the fork until the dough can hold together.
4. Dollop tablespoon-sized scoops of dough onto a parchment-lined sheet. Flatten the cookies with your fingers.
5. Bake at 180°C for about 10 minutes, or until golden browned. Let the cookies rest on the baking tray for a few minutes before transferring to a wire rack to cool completely.
